Easy Baked Beans

Ingredients (Serves 4)

  • 1 tsp Extra Virgin Olive Oil

  • 3 Garlic Cloves, minced

  • 1 tsp Ground Cumin

  • 1 tsp Ground Paprika

  • 1 Green Capsicum, diced

  • 1 Red Onion, diced

  • 1 can Diced Tomatoes

  • 2 cans Four Bean Mix, drained and rinsed

  • 1/2 cup of Water

  • 1 tbsp Parsley, to serve

Instructions

  1. Heat oil in a large saucepan on medium-high heat and add onion, capsicum, garlic, spices and toss well to coat. Cook for 5 minutes or until onion and capsicum have softened.

  2. Stir in beans, tomatoes and 1/2 cup water and cook for approximately 10 minutes or until liquid starts to thicken.

  3. Once thickened to your liking, divide bean mixture between serving bowls and serve topped with fresh parsley.

    Tip: I serve mine with eggs (cooked how ever you like!) and some bread too.
