Beef Burrito Bowls

Ingredients (Serves 4)

  • 5g Extra Virgin Olive Oil

  • 500g Extra Lean Beef Mince

  • 1 sachet Taco Spice Mix (I use Old El Paso)

  • 400g Canned Tomates (diced)

  • 380g Black Beans, drained and rinsed

  • 2 Carrots, grated (approx 150g)

  • 1 Brown Onion (approx 150g)

  • 40g Shredded Cheddar Cheese

  • 2 cups cooked Rice (1/2 cup per serve)

Instructions

  1. Heat oil in a pan on medium to high heat. Add onions and cook until soft.

  2. Add mince and taco seasoning and cook until meat has slightly browned.

  3. Add tomatoes and drained beans along with grated carrot.

  4. Continue to cook until meat is completely cooked through and black beans are tender.

  5. Serve in a bowl with half a cup of cooked rice for each serve.

  6. Top with a small amount of shredded cheese and enjoy!

    Tip: Add to this dish with your choice of fresh vegetables and even some tortilla chips. Just don't forget to log anything extra in your meals!
