One-Pot Chicken Parmi

Serves 4 (226 calories per serve)

Ingredients

  • 500g Chicken Breast, halved length ways

  • 10g Extra Virgin Olive Oil

  • 350g Tomato Passata

  • 50g Mozzarella, shredded

  • 10g Parmesan, shredded

  • Salt and pepper (optional)

Instructions

  1. Preheat oven to 180-200C.

  2. Drizzle oil into ovenproof tray and prepare chicken. Line tray with pieces of chicken.

  3. Top chicken with passata, mozzarella and parmesan. Season with salt and pepper if you like.

  4. Place in oven for approximately 30-minutes or until chicken is cooked through.

  5. Serve with your choice of side - Try a salad or even some air-fried chips!

    Tip: You can swap out the chicken for eggplant and simply cook until eggplant is tender
