Feta Pasta Salad

Ingredients

Feta Cheese

1 Zucchini (approx 350g), chopped into 2-3cm pieces

1/2 Red Onion (approx 150g), chopped into 2-3cm pieces

180g Cherry Tomatoes, whole

200g Pasta of Choice (I used Vetta Protein Pasta, available at Woolworths)

15g Extra Virgin Olive Oil (optional)

Salt

Pepper

Instructions

  • Pre-heat oven to 180C.

  • Using an oven proof dish, place whole feta in centre followed by the vegetables of your choice.

  • Place feta and vegetables in oven for approximately 20-minutes (or until vegetables are soft).

  • While the vegetables are cooking, cook your pasta until al dente (if using Vetta, ignore their cooking time and cook for 8-10 minutes!).

  • Once vegetables and feta are both soft, press feta with a fork and stir through vegetables. Add cooked pasta and stir vegetable mix through to coat with feta.

  • Serve immediately or chill and serve as a side dish.

Tip: Enjoy it on it's own OR add extra protein with grilled chicken or even canned tuna!
